What Are Crystal Malts?
If you’ve ever enjoyed a beer with a rich, slightly sweet flavor—maybe with hints of caramel, toffee, or even dried fruit—you’ve likely tasted the influence of crystal malts.
Crystal malts, also known as caramel malts, are a special type of malted barley used by brewers to add flavor, color, and body to beer. What sets them apart is how they’re made. After the barley has sprouted, it’s gently heated while still moist, allowing natural sugars to form inside the grain. Then, it’s roasted to lock in those sugars and give the malt its signature sweet, toasted character.
Depending on how long and how hot the roasting process is, crystal malts can bring a range of flavors—from light honey and caramel in the paler versions, to rich toffee, raisin, or even burnt sugar in the darker ones. They also add a warm amber to deep reddish-brown color to the beer, as well as a fuller mouthfeel and longer-lasting foam.
