Marzipan Steamroller is a powerful pastry stout with a unique twist. The base is robust, with 30% rye and 15% spelt malts, giving it a texture that’s both velvety and slightly sticky. We found that the best marzipan flavor comes from using dried cherry and apricot pits. For a deeper, layered taste, we played with the intense bitterness of extra dark espresso beans and the sweetness of various types of honey to achieve the perfect balance. This time, we added the honey later to make sure the flavors don’t get lost during fermentation. European wildflower honey adds a subtle yet intriguing floral note, while almond honey brings a dark, nutty, and almost savory flavor.
