“Eureka Raw NEIPA”, maybe this needs another name… Raw doesn’t sound so tasty? The principle is to never boil the wort, but to pasteurize it at a lower temperature. Hence “raw.” Perhaps “no boil”? The goal is to make a hazier and fuller beer, because the proteins do not denature and precipitate due to the boil. Owh, we got it! EUREKA! We’ll call it Untamed NEIPA!

Moersleutel Eureka: Untamed NEIPA is the result of that moment of clarity. By skipping the traditional boil and instead pasteurizing the wort at a lower temperature, we created a beer that keeps its proteins intact — resulting in a hazier, fuller, and softer New England IPA.

The Craft Behind Untamed NEIPA

No-Boil Brewing for Maximum Haze & Body

Most beers are boiled to sterilize the wort and extract bitterness. With Untamed NEIPA, we took a different route.

The Untamed Process

  • No traditional boil

  • Wort is gently pasteurized at a lower temperature

  • Proteins remain intact instead of denaturing and precipitating

Why It Matters

This approach leads to:

  • Extra haze

  • Fuller mouthfeel

  • Softer texture

  • Enhanced juiciness

It’s a technique that strips brewing back to its essence — raw, expressive, and unapologetically modern.

Hop Selection: Juicy & Expressive

To match the untamed body and texture, we chose a classic yet powerful hop trio:

  • Citra – grapefruit, mango, bright citrus

  • Nelson Sauvin – white grape, gooseberry, fresh fruit elegance

  • Mosaic – tropical fruit, berry depth, juicy complexity

These hops shine in a softer, rounder beer where bitterness takes a back seat to pure flavor.
