We tried something new for this Moersleutel EUREKA: it’s a Carrot Cake Barley Wine! We love our pastries here at Moersleutel (duh!), and the carrot cake is one of our favorites.  This barley wine is triple mashed for a thick body that will remind you of the mouthfeel of a good, freshly baked carrot cake. Brewed with five different grains and a lot of adjuncts, this brew is decadence in it’s purest form!

Ingredients: water, barley malt, wheat, oats, rye, spelt, cassonade sugar, walnut, coffee, vanilla, cinnamon, ginger, clove, nutmeg, hops, yeast.

For this Moersleutel EUREKA, we tried something completely new — and unapologetically indulgent:
a Carrot Cake Barley Wine.

We love our pastries here at Moersleutel (duh), and carrot cake has always held a special place in our hearts. So instead of just baking it, we decided to engineer it into beer form. The result is a bold, pastry-driven barley wine that blurs the line between dessert and digestif.

This beer is triple mashed for a thick, luxurious body that mirrors the mouthfeel of a freshly baked carrot cake — rich, dense, and deeply satisfying. Brewed with five different grains and an abundance of adjuncts, this is decadence in its purest form.

This EUREKA release was all about texture, warmth, and layered sweetness.

Triple Mash for Cake-Like Body

By triple mashing, we extracted maximum richness and viscosity, creating:

  • A thick, almost batter-like mouthfeel

  • Deep malt sweetness

  • The structural backbone needed for heavy pastry additions

Five-Grain Foundation

The base beer is built on:

  • Barley malt – depth and strength

  • Wheat & oats – softness and creaminess

  • Rye – subtle spice and body

  • Spelt – rustic grain complexity

Together, they form the perfect canvas for dessert-level flavors.

To recreate the full carrot cake experience, we layered in classic elements:

Cassonade Sugar

Adds:
